Trout in Corn Husks, Pickled Mushrooms & other 19th Century Recipes from Madame Benoit

I was looking through a vintage 1961 issue of Canadian Homes magazine when I came across a little spread of recipes from the iconic Canadian and Quebecois chef and cooking writer Madame Benoit.

It was centered around recipes that she had found in cookbooks from the Upper Canada of the 19th Century -- showing she was a fan of vintage cookbooks and recipes as well!

These recipes are fascinating and look totally delicious. I plan to make the mushroom dish as soon as possible and will share the results -- though given that it is only a pound of mushrooms and that if you don't know what you are doing sealing can be very dangerous, I plan to eat them with family right away!
